Nectarine, Tomato and Watermelon Salad

This wonderful, delicious, fresh summer salad is fast and easy, the sweetness of the fruit and dressing balanced by the peppery, slightly spicy flavor of the arugula.

Dressing
- 2 tablespoon fresh lime juice
- 1½ tablespoon extra-virgin olive oil
- 1 tablespoon honey - or agave
- salt and pepper to tast
Salad
- 3 cups seedless watermelon - cubed
- 1½ cups nectarines - ripe but firm
- ½ cup red onion - thinly sliced
- 1 tablespoon fresh basil leaves - thinly slice, chiffonade
- ¼ cup fresh mint leaves - torn. Optional
- 1 pint cherry or grape tomatoes - halved. I like to use mixed heirloom cherry tomatoes
Dressing
- In a large bowl, whisk together the lime juice, olive oil, and honey or agave. Season to taste with salt and pepper.
- Add watermelon, peaches, onion, herbs, and tomatoes and toss gently. Chill and serve.
- Options: Top with crumble goat cheese or torn pieces of burrata, sliced grilled chicken, or grilled shrimp.
