Checca

This delicious, traditional Roman sauce can be served on slices if Italian loaf toasted on a grill as bruschetta or with pasta or as a condiment on fish, like swordfish (see Swordfish with Checca on Polenta).

Ingredients
  

  • 1 pint heirloom cherry tomatoes - quartered
  • ½ cup fresh basil - chopped or chiffonade cut (see note)
  • 2 cloves garlic - minced
  • ½ cup green pitted olives - finely chopped
  • salt - to taste
  • freshly ground pepper - to taste
  • 1 tablespoon Parmigiano-Reggiano - grated (optional)

Instructions
 

  • In a non-reactive bowl, mix all the ingredients together, cover with plastic wrap and let rest for 2 to 10 hours for the flavors to blend.
