Checca
Checca is a traditional Roman uncooked condiment that I make with a combination of chopped heirloom cherry tomatoes, green olives, garlic, fresh basil, salt, and pepper.

This delicious, traditional Roman sauce can be served on slices if Italian loaf toasted on a grill as bruschetta or with pasta or as a condiment on fish, like swordfish (see Swordfish with Checca on Polenta).
Ingredients
- 1 pint heirloom cherry tomatoes - quartered
- ½ cup fresh basil - chopped or chiffonade cut (see note)
- 2 cloves garlic - minced
- ½ cup green pitted olives - finely chopped
- salt - to taste
- freshly ground pepper - to taste
- 1 tablespoon Parmigiano-Reggiano - grated (optional)
Instructions
- In a non-reactive bowl, mix all the ingredients together, cover with plastic wrap and let rest for 2 to 10 hours for the flavors to blend.
