Tuscan Bean Salad
A fast and easy, satisfying meal starter.
Ingredients
- 1 15 oz can cannellini beans - drained
- 1 14.5 oz can diced tomatoes - I like S&W Petite diced with sweet onion & garlic
- ½ cup red onion - diced
- ½ cup celery - thinly sliced
- ¼ cup Italian flat parsley - chopped
Dressing
- 3 tablespoon chicken broth
- 2 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon dijon mustard
- 1 clove garlic - minced
- 1 teaspoon salt
- ¼ teaspoon ground oregano
- ¼ teaspoon ground thyme
Instructions
- Place beans in a bowl
- Add can of diced tomatoes
- Add the onion, celery and parsley
Dressing
- Whisk together remaining ingredients
- Pour over bean mixture to coat, Cover and refrigerate for two hours.
