Midday respite. Nutritionists advise us that this should be the main meal of the day to leave plenty of time to digest before going to sleep. But, the majority of us make it a mid-size meal most suited for soup and sandwiches but can range all the way to full-plated entrees. In business, it was humorously measured by how many martinis and most often where deals get discussed and made. It tends to lean on the lighter fair and nicely fills in the gap between breakfast and dinner.
Easy Perfect Chicken and Cheese Fajitas
My version of a fajita is a soft tortilla with spicey charred chicken, onions and bell peppers but served like a chicken taco with lettuce, salsa, avocado and cheese. It is my favorite Mexican dish, quick to throw together and a healthy, satisfying meal choice.
Salad Niçoise
This lovely, fresh and beautiful dish is a staple of the French diet. You can top it with any protein, but the classic seared tuna is my favorite.
