Consisting of 60% albumen, the whites, and 30% yolk, the yellow, which is the protein, they show up in endless baking recipes for desserts, souffle, pancakes, egg salad, salad dressings, and sauces to a huge variety of preparations for wonderful breakfasts and brunch dishes. It can be fried, boiled, baked, and microwaved. The amazing versatile egg. There is virtually no limit to its uses.
