Brunch is my favorite meal. Breakfast is too early and lunch, well lunch is lunch, but brunch has all the promise of a hearty breakfast with the sophistication of a chef’s approach. Whether it is some international egg dish or just plain eggs benny, count me in!

We all love this perfect breakfast sandwich, the classic Egg McMuffin, and after directing over 400 commercials for McDonalds, I learned most of their tricks. One of them is using egg corrals to make that circular egg that fits the sandwich perfectly.
