Ingredients
  

  • 1 15 oz can cannellini beans - drained
  • 1 14.5 oz can diced tomatoes - I like S&W Petite diced with sweet onion & garlic
  • ½ cup red onion - diced
  • ½ cup celery - thinly sliced
  • ¼ cup Italian flat parsley - chopped

Dressing

  • 3 tablespoon chicken broth
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dijon mustard
  • 1 clove garlic - minced
  • 1 teaspoon salt
  • ¼ teaspoon ground oregano
  • ¼ teaspoon ground thyme

Instructions
 

  • Place beans in a bowl
  • Add can of diced tomatoes
  • Add the onion, celery and parsley

Dressing

  • Whisk together remaining ingredients
  • Pour over bean mixture to coat, Cover and refrigerate for two hours.
