Egg RLK Breakfast Muffins

We all love this perfect breakfast sandwich, the classic Egg McMuffin, and after directing over 400 commercials for McDonalds, I learned most of their tricks. One of them is using egg corrals to make that circular egg that fits the sandwich perfectly.

Egg RLK Breakfast Muffins
Like McDonald's classic Egg McMuffin these are beautifully fried eggs, yolks still runny, sitting on crisp bacon or sausage covered in melted cheese on a toasted English muffin. And now, you can make them anytime you want. Enjoy!!
Equipment
- 8" skillet or griddle
- 4 egg rings or corrals
Ingredients
- 4 eggs
- 4 English muffins - toasted
- 4 slices bacon or sausage patties - I use turkey.
- 4 slices American cheese - or mild cheddar
- 1 pinch salt and freshly ground pepper - to taste
Instructions
- Fry up the bacon or sausage. The bacon will need to be halved to neatly fit in the sandwich. Keep warm in an oven at 200°F.
- Heat skillet or griddle on medium heat. Set the four corrals spaced and add a dab of butter into each. When the butter starts to sizzle, crack an egg into each corral add salt and pepper and let fry until the whites around the edges start to form, 2 to 3 minutes.
- Using the tip of a pointed knife slightly break the yoke trying to minimize it spreading.
- While the eggs are frying, toast your muffins until they just start to crisp and take on some color about 2½ to 3 minutes.
- Run the knife along the inside of each ring separating the egg from the side then carefully lift off the ring. The egg should now hold the round shape with the yoke still soft.
- With a spatula flip each egg over for just a few second to solidify the whites but not cooking the yolk through. By the time you have flipped the fourth egg the first one can be removed followed by the others.
- Place the bacon or sausage on the four bottom halves of the English muffin. Then place an egg on each covered with a slice if the cheese of your choice and place under the broiler until the cheese has melted, about a minute. Remove from oven, place the top half of the muffin on each sandwich and serve.
